Versatile Sugar-Free Muffin Recipe; I used this to make a loaf cake to eat with whipped cream and fresh raspberries. I subbed 1 C of almond flour for 1/2 C each Flax and coconut flours, to both lighten the calories and the expense. I loved it. Jill loved it. Evan could taste the flax, Josh could feel the coconut. Add more sweetener (2T xylitol + 1 t sweet blend was not enough) and do more than 1 T vanilla. Overall, really good stuff.
